Quickest at home ramen you can make without any preperation
Sometimes you get a craving for ramen but want the good stuff. Nothing out of a pack but then you don’t have the time to do a full on tonkotsu ramen broth. Try this, it satisfies the ramen cravings and can be made in 15 minutes.
Ingredients
2 Shallots
6 cloves of garlic
1 egg
2 tbsp butter
Corn (fresh or frozen)
Small knob of ginger
½ lb ground pork
1 tbsp sesame oil
1 tbsp cooking oil
3 tbsp sugar
2 tbsp chili crisp
¼ miso paste
1 and 1/2 quart chicken stock
1 tbsp Instant Dashi
1 bundle of ramen noodle
1 stalk of green onions
Steps
1 - Boil water and soft boil an egg (boil 6-7 minutes and cool in ice water)
2 - Chop finely shallots and garlic. Grate ginger. Prep green onions for serving later
3 - In a larger saucepan, brown butter
4 - Once browned, add corn and cook until just hot. Set aside
5 - Cook ground pork until brown and crispy - set aside
6 - Saute shallot, garlic, ginger in cooking oil and sesame oil until fragrant - ~3 minutes
7 - Add sugar and chili crisp - saute another 1 minute
8 - Add miso paste and browned pork to pan along with chicken stock and instant dashi
9 - Bring soup to a light simmer and remove from heat
10 - Boil ramen noodles according to packaged instructions - strain
11 - Add broth to bowl - add noodles to bowl - plate with corn, soft boiled egg cut in half, green onions
Notes
To do this all in 15 minutes can be challenging. Start boiling the water for your ramen early as well as for your soft boil egg. Most of the time spent here is just waiting for water to boil. You can easily meal prep this and have broth kept in the refrigerator along with prepared soft boiled eggs and have fresh ramen in the same amount of time as the pre-packaged instant ramen.
