Recipe for chickpea tikka masala
Ingredients
1 large onion
4 Garlic Cloves
2 inch ginger (Can sub for garlic ginger paste)
Jalapeno
Cilantro
2 cans diced tomato
2 cans chickpea
1 cup full fat coconut milk
1 tbsp Garam Masala
Steps
1 - Cook onion and garlic with salt
2 - Add garam masala, ginger and jalapeno - cook 1-2 more minutes
3 - Add tomatoes and bring to a boil
4 - Reduce heat until slightly cooled
5 - Spoon off about half of the mixture into a food processor or blender and blend until smooth and add it back to the pan
6 - Add chickpeas
7 - Simmer for 15 minutes
8 - Add coconut milk and simmer an additional 5 minutes
9 - Serve and garnish with cilantro - best over rice
